Cooking Machine

So today, I tried to be a little proactive for the week and plan my entire menu out. I try to do this every week, but really - with no success. With me inching my way back onto Jenny full time, I need to prep my husband for what is to come.

So, a trip to Target and Schnucks - and about $100 later, we've got dinner for 2 weeks.

Around here, we're chicken eaters. We could probably eat chicken every night on the grill and be A-Ok with it. Tonight, we had Jamaican Jerk chicken and grilled corn on the cob. I buy in a 8-12 piece count and seperate, freeze and repeat. It's so cost effective and it's perfect for meal planning.

I cooked a few extra so tomorrow we can do chicken tacos, quesadillas, salad - tons of options. On top of my thriftiness, I got some killer deals @ Target - 2 bags of chips and salsa for less than $3 and 5 packs of free hot dogs compliments of Oscar Meyer for my Hot Dog tasting party on Saturday. I got free oreos, mayo, twix, and a bunch of other goodies. I love coupons. Let me tell you! And I got some free OPI nailpolish at Beauty Brands today - it's a funky silver granite color. It's cool for free!

Last week, I had bought 2 pints of organic raspberries when they were $1 at Dierbergs and never used them. So today, I tried my hand at sorbet. Let me tell you, this stuff is uhmazing! It's better than what you can buy at the store. I did a 1/2 recipie, because I wanted to make sure it would taste good. So, I have 2 cups of sorbet to enjoy this week.

On top of that, I made a lime chiffon pie - which is really just a graham pie crust, a tub of coolwhip and sugar free lime jello. It's minimal calories, but it packs a punch!

Also, I made my weeks worth of Jello. I can make an entire box, which is 4 servings at 10 calories each and I don't feel guilty about eating the whole thing. I make 4 boxes and then I have them on hand for an easy dessert at night. I don't feel the guilt and atleast I'm gettin another 2 cups of water in. It's a freebie on Jenny.

I got my bikini in the mail yesterday for Victoria Secret - it's adorable. I talked with my dad over the weekend and say Hello Cruise - Sept 19-24th. A whole week of awesomeness going to Cosumel, Georgetown and Ft. Lauderdale. Short trip, but should be a great time for my first cruise.

Starting back tomorrow, I'm hitting the gym and doing my EA Active before I head to work in the morning. I hung my bikini on the back of my bathroom door - so I will see it every morning when I get up so I know what my focus is for the day.

My goal in the next 3 months is to lost another 25 lbs. I can totally do it!
