Whoo hoo it's Co-op Produce Day!

I told you a while back about my experience with a Produce Co-Op. Well, after being so happy with round 1, I went for round 2! A little later than I wanted to, but we had vacation and stuff going on. This time, I opted to get a few more goodies that are more than the usual bunch.

If you don't remember the premise, for $23, you get a big assortment of fruits and veggies. Everything is very fresh (the bananas are super green) and ladies, you may need assistance putting everything in your car! The cool thing is every 2 weeks you can place your order and then go pick up close to your area. Check out the website for details near you. We could probably split this with another family, but the savings are still fantastic. Here is what in this weeks lot: 


2 heads lettuce - I think Romaine
2 Zucchini
6 Cucumbers 
Bunch of Bananas
1 Eggplant 
1 Head Cauliflower
12 Apples
3 Pomegranates 
1 Pineapple
A Bag of Oranges and Red and Green Apples
6 Big Sweet Potatoes - maybe I'll make chips!

In addition to all of that, I also tried a few of their extra items. You can get anything you want and it's a great deal! I got the lemon and lime pack - only $2.35 and then I also go Sun-Dried Tomato Tortillas and Fresh Tri-colored chips. There is a local company that makes these fresh. They are so much cheaper than the grocery store. I'll report back with the tastiness.  If anyone has a good recipe to use eggplant, let me know. I'm thinking Eggplant Parm - but I had a hubby turn his nose up.

I'm also thinking about making Cauliflower Faux mashed potatoes like they to at Houlihan's. We'll see since hubs HATES Cauliflower! Sneaky sneaky!

  1. Let me know how the cauliflower "taters" turn out and share the recipe! We (my work) might be a new drop off for a co-op, not sure if it's the same one.

  2. Jen- Its great to see your post on the coop!! I love it. I made a roasted cauliflower soup that was amazing. Its on my blog but I will have to find it. Let me look at my eggplant recipes. I like eggplant parmesan but i don't like when there is a ton of spaghetti sauce on top. I like to roast down my tomatoes and other ingredients to make my own light sauce to go on top. I would also say try the pizza crust they are wonderful. Plus another local company. Glad to see your liking it.

  3. I also wanted to ask where does your husband work at? I am amzzed at the wonderful ways communities are jumping on to get their families eating healthier.
