Well, I'm off and rolling. The problem is when Jeff is out of town, I don't do anything. Riley gets all out of wack because her schedule is all thrown off. So, I'm home on the couch for the night and she is sitting on the back of the couch watching my type.
Last night I made Healthy Pasta House Salad to go with my Spaghetti and Strawberry Shortcake. I love To go to the
Pasta House, but never order the fat free dressing there. Basically, here's the break down of the recipie:
- Romaine Lettuce
- Iceberg Lettuce
- Thinly sliced Red Onion
- Pimentos
- Artichokes
- Grated Parmesean Cheese
- Pasta House Fat Free Dressing
Mix everything together and chill in the fridge. It's sooo yummy! The great thing - is the only bad thing is the cheese, and you don't use that much! I can eat all of it I want, so I'm in good shape.
Today, I had my yogurt for breakfast and a Tazo wild orange tea, then I had my Chicken Stuffed Hot pockety thing for lunch (so yummy) and fresh Fruit Cocktail and strawberries. For snack later I had a banana and then the blueberry muffin I was supposed to eat for breakfast. On tap for dinner, I'll be having Fajitas! My favorite! Just add a tiny bit of mexican cheese and salsa and it's so good!
I haven't decided on my snack yet - maybe white cheddar popcorn and a sugar free jello (only 10 calories!)
I'm excited because a few of my friends at work have decided to pack their lunches too - it's great because we are all eating heathier and saving money.
