So, as time went on, I've added and subtracted ingredients. I made this for Jeff when we first started dating and he loved it. I thought I'd share this fabulousness with you. This can either be a meal, or perfect as an appetizer for a party.
Ingredients:
1 Bag of Chips (Usually Tostidos, but I had a coupon)
1 lb Ground Beef
1 bag (2 Cups) Mexican Blend Cheese
Taco Seasoning (either 1 package or I bought the "Value" size which was the equivalent of 8 packets)
1 Can Refried Beans (I use Fat Free)
Optional Ingredients
Sour Cream
Sliced JalapeƱos.
Sliced Black Olives
Shredded Iceberg Lettuce (in the lettuce section)
Diced Tomatoes (Yuck - but had them when I was a kid)
Brown the beef. Drain and rinse the meat and the pan to get the most fat out of the meat.
Add 1 packet of Taco seasoning and 2/3 cup of water and cook on medium to combine.
Preheat your broiler while you are cooking the beef.
Spread the can of refried beans on a pizza pan evenly.
Once the ground beef is done, spread on top of the beans
Spread the cheese on top of the meat. I don't use the entire package, that's just too much cheese.
Make sure everything is coated well. Place under the broiler for a few minutes until the cheese is melty.
Once out of the oven, add the toppings. Usually, I add a ring of lettuce around the outside of the pan. I put the sour cream in the middle and then top with olives and jalapeƱos. I had forgotten the lettuce and olives. I also have a side of salsa to go with everything just for some extra yumminess.
I just serve the pizza pan on top of a towel to not mess up the coffee table and then have the chips on the side and scoop. It's super good, quick and easy.
