Super Nacho!

I love me a super nacho. When I was little, my mom would make super nacho and made it a big deal because we got to eat in the living room. In our house, that was unheard of. But somehow this was the only meal we got to eat on the floor and drink soda. Yes, I was a sheltered child.

So, as time went on, I've added and subtracted ingredients. I made this for Jeff when we first started dating and he loved it. I thought I'd share this fabulousness with you. This can either be a meal, or perfect as an appetizer for a party.

Ingredients:

1 Bag of Chips (Usually Tostidos, but I had a coupon)
1 lb Ground Beef
1 bag (2 Cups) Mexican Blend Cheese
Taco Seasoning (either 1 package or I bought the "Value" size which was the equivalent of 8 packets)
1 Can Refried Beans (I use Fat Free)
Optional Ingredients
Sour Cream
Sliced JalapeƱos.
Sliced Black Olives
Shredded Iceberg Lettuce (in the lettuce section)
Diced Tomatoes (Yuck - but had them when I was a kid)




Brown the beef. Drain and rinse the meat and the pan to get the most fat out of the meat. 
Add 1 packet of Taco seasoning and 2/3 cup of water and cook on medium to combine. 
Preheat your broiler  while you are cooking the beef.


Spread the can of refried beans on a pizza pan evenly.


Once the ground beef is done, spread on top of the beans


Spread the cheese on top of the meat. I don't use the entire package, that's just too much cheese.
 Make sure everything is coated well. Place under the broiler for a few minutes until the cheese is melty. 


Once out of the oven, add the toppings. Usually, I add a ring of lettuce around the outside of the pan. I put the sour cream in the middle and then top with olives and jalapeƱos. I had forgotten the lettuce and olives. I also have a side of salsa to go with everything just for some extra yumminess. 

I just serve the pizza pan on top of a towel to not mess up the coffee table and then have the chips on the side and scoop. It's super good, quick and easy.

It's Fall and What I'm Lovin'!


I just love this picture! This was the Morganford Street Fair last year. I had super short hair and bangs. Not the ideal situation now. Anyway, here are a few things that I'm loving now!
  • 1 Days Left of Flex Week
  • Fall TV Shows ( Especially Glee, Modern Family, Gossip Girl, Rules of Engagment and my new favorite Mike & Molly)
  • Mulling Spices
  • Not having to turn the AC or the Heater on...it's fantastic!
  • I joined the St. Louis Junior League! I'm so excited to go out and volunteer and make a difference and meet some fabulous ladies! My first stop is a Community Tour and lunch on Saturday. For me, I am really stepping out of my comfort zone. I don't do things on my own, and this is the first time I'm doing something. I think I'm really going to grow as a person with this...stay tuned for more.

  • My New Hair Do!  My hair gal, Karyl, decided to give me the Tori Spelling. I kinda like it.


Wow my nose looks big and I have duck face....but my hair - it's super cute. It's just super angled, it's hard to tell. And apparently I have on no makeup - gross. 

Anyway, that's what I'm loving - what are you loving??

1 Down 3 To Go!

That sounded like football terminology. No, that's just my week this week. Twice a year, we have the option of a Flex Week. Meaning you can work 4 10 hour day and take a day off. Saweet. You can work it however you'd like, you are just responsible for making up the time.

In the past I've always gone in at my usual 8 and stay till 6. This time, ooh this time, I'm being a rebel. I'm going in at 7 and working till 5. Gross! I like my 8-4:30. I like my 1/2 hour lunch. I get everything done in the time frame.  During flex week, I don't take a lunch and work straight through. Because who wants to live at work for a week. Not I said the troll.

So, that's where I am. Stuck at my desk. And to occupy the time, I've doubled my workload so I don't go crazy! Only perk, is that I'm allowing myself a Starbucks Latte every morning as a Good Job Jen - you're a trooper for getting up 1 1/2 hours earlier than usual.

I'll be really happy when Thursday comes because Friday will be Glorious! I'm not doing anything, so if anyone wants to do lunch or shopping or anything fun - let me know!
