So, I decided on this snowy day, I'd make one of the treats out of the book. I picked Snicker Doodle Poodle Poos. Be aware that with this book being organic, it also tries to be as gluten free as possible. This recipe called for Oat Flour and Brown Rice Flour. I found both at Whole Foods, but also got the Brown Rice Flour at Dierbergs.
- 1 1/2 Cups Oat Flour
- 1 1/2 cups Brown Rice Flour
- 1 Egg
- 1 tsp Vanilla
- 2 tsp Cinnamon
- 1/4 cup Honey
- 1/2 cup water
Preheat the oven to 375. In a bowl, mix all ingredients together. I microwaved the honey so it was a little runnier.
After mixing, make 1 inch small balls. I used a cookie scoop.
I put parchment down. Really, because I'm lazy and have zero interest in doing dishes. From there, take a fork and do a criss-cross like a peanut butter cookie. Don't worry about space they won't expand or move.
Bake for 18-22 mins. I was on the 18 side since Riley doesn't like super crunchy treats. Once out of the oven, cool on a cooling rack and serve. So far, rave reviews! Riley Sue is picky, but she seemed to really enjoy them! I was going to make the one with pumpkin, but with the weather, I don't think we want the effects of pumpkin in the snow!
